Carrot Dogs


Time: 45-minute cook time, 4+ hr marinade time

Serves: 2-4


Ingredients:

5-12 carrots

1/4 cup coconut aminos

3 Tbsp lemon juice

1/4 cup veggie broth

1 Tbsp smoked paprika

2 Tbsp maple syrup

4 garlic cloves, crushed

1/2 tsp onion powder

1 tsp mustard powder


Instructions:

Peel 5-12 carrots and steam until fork tender.

While carrots are steaming, combine the remaining ingredients to make the marinade.

Combine the carrots and the marinade in a plastic bag and marinate for a minimum of 4 hours, but overnight if possible for more flavor.

Place the carrots on grill over medium-high heat and baste with marinade as you rotate it every few minutes until light grill marks have formed on all sides. For more charred flavor, leave on the grill longer.
