"Fish" Tacos



Time: 25 minutes prep time + marinate time (2 hrs - 24 hrs) Serves: 1 -2 


"Fish" Ingredients: 

  • 1 large young coconut, flesh removed 

  • 2 large garlic cloves, minced  

  • 1/2 Tbsp raw honey 

  • 1/4 tsp salt

  • Juice from 1.5 limes

Other Ingredients: 

  • 3-6 large leaves of lettuce for taco shells

  • Topping of choice: diced red onion, tomatoes, purple cabbage, salsa, avocado chunks, cilantro, red peppers, shredded carrot, radishes, pico de gallo,  and lime juice

Instructions:

  1. Open your coconut. See an instructional video here

  2. Drink your coconut water (feel the hydration) and then scoop out the coconut flesh using a metal spoon. This is your coconut meat that will be used as the "Fish".

  3. Rinse any coconut husks away from the coconut meat. 

  4. Roughly chop the coconut meat into large bite-sized pieces. 

  5. In a container, whisk garlic, honey, salt, and lime juice until the honey has completely dissolved.

  6. Add the coconut meat to the marinade and refrigerate for at least 2 hours. For the most flavor, marinate overnight.

  7. When you are ready to use the "fish", simply remove it from the marinade and add it to your taco shell, or lettuce wrap and garnish with your favorite toppings. 

 
  • Tip: avocado pairs well with this dish
