Mixed Berry Jam


Time: 15 minutes  Yields: 16 oz  Ingredients:

  • 1/2 lb (1.25 cups) blackberries and/or raspberries.

  • 6 Medjool dates, pits removed

  • 1 tsp. lemon zest

Instructions: 1. If you are using frozen berries, thaw first and remove liquid. 2. If you are using fresh berries rinse them and pat dry with a paper towel.  3. Cut the dates in half. 4. Zest 1 teaspoon of lemon rind. 5. Blend the lemon zest, dates, and berries in a blender or food processor until the mixture is smooth.  6. Store the jam in a glass jar in the fridge. 7. Eat within 4 to 5 days.

Try experimenting with other fresh or frozen berries!
