Spicy Gazpacho Bisque

Traditionally, gazpacho is a Spanish-style soup made from tomatoes, other vegetables, and spices. Unlike most soups, it is served cold, which is perfect for warm weather. With local produce๐Ÿ‘ฉโ€๐ŸŒพ in abundance, there is no better time to whip up a batch of this spicy soup! The recipe is raw, fat-free, and salt-free! TIP: celery is naturally salty, so if you desire more of a salty flavor, use more celery!


๐ˆ๐ง๐ ๐ซ๐ž๐๐ข๐ž๐ง๐ญ๐ฌ:

4 Roma tomatoes

1/4 Jalapeno, stem removed

4 cups zucchini, peeled and cut into 1" chunks

2 garlic cloves

3-4 dates, pits removed

Juice from 1/2 lemon

2 stalks of celery, cut into chunks

1/4 cup red onion

1/3 cup cucumber, peeled

1/2 red pepper


๐ˆ๐ง๐ฌ๐ญ๐ซ๐ฎ๐œ๐ญ๐ข๐จ๐ง๐ฌ:

1. Blend all ingredients in a high-speed blender until desired consistency is reached.


Serve as is or top with garnishes for extra texture. Recommended: sunflower seeds, cilantro, red pepper, cucumber, avocado, and red onion
