๐ข๐น๐ฒ๐ฌ๐ ๐๐ช๐๐น๐ช๐ฌ๐ฑ๐ธ ๐๐ฒ๐ผ๐บ๐พ๐ฎ
Traditionally, gazpacho is a Spanish-style soup made from tomatoes, other vegetables, and spices. Unlike most soups, it is served cold, which is perfect for warm weather. With local produce๐ฉโ๐พ in abundance, there is no better time to whip up a batch of this spicy soup! The recipe is raw, fat-free, and salt-free! TIP: celery is naturally salty, so if you desire more of a salty flavor, use more celery!
๐๐ง๐ ๐ซ๐๐๐ข๐๐ง๐ญ๐ฌ:
4 Roma tomatoes
1/4 Jalapeno, stem removed
4 cups zucchini, peeled and cut into 1" chunks
2 garlic cloves
3-4 dates, pits removed
Juice from 1/2 lemon
2 stalks of celery, cut into chunks
1/4 cup red onion
1/3 cup cucumber, peeled
1/2 red pepper
๐๐ง๐ฌ๐ญ๐ซ๐ฎ๐๐ญ๐ข๐จ๐ง๐ฌ:
1. Blend all ingredients in a high-speed blender until desired consistency is reached.
Serve as is or top with garnishes for extra texture. Recommended: sunflower seeds, cilantro, red pepper, cucumber, avocado, and red onion
